Low-fat milk and soy milk foods contain protein and carbohydrates as well as plenty of calcium and other essential vitamins and minerals. Cheese does not contain carbohydrates, and is therefore listed with the meats. Creams and other fatty dairy products are listed as fats.

USTriathlete: you are very misinformed. Tofu is not a fermented soy product. In fact, soy milk and tofu are very closely related, as tofu is something akin to a curdled version of the soymilk. While the production of soymilk does indeed involve a "process", it is not to say that one should cast such aspersion upon it, as the process of making soymilk is a far simpler, healthier one than those that are involved in the production of other "processed" foods. There are other soy products that are indeed fermented, which may be the reason that you are confused. Those include miso, tempeh, soy sauce/tamari.

There are organic soy products that have no additives. I don't think it is fair to make a blanket statement that all soy is processed. The same arguement could apply to milk products that are anything more than "raw milk" (e.g. pasturized or cultured products).

I guess I never realized... I always drank soy milk because I thought it was healthier. I'm gonna look at the labels more closely next time I go to the grocery store. I usually drank the 8th Continent light (vanilla flavor) soymilk.

the only soy product that is any good is tofu (fermented). if you are allergic to goat or cow's milk, try Rice milk plain (no sugar added).
