I made up this recipe myself, and its Really good,

I use a George foreman grill for this recipe because it squeezes out most of the mayonnaise the recipe uses,

    I Use,

A pack of chicken cutlet strips(thin small ones, so its not dry)

    The Sauce,

    3 tsp Light mayonnaise
    4 Tablespoons lemon juice(at least,i use more)
    Dash of minced garlic
    Dash of minced onion
    Dash of black pepper

you could put as much of each ingredient as you want really,
and i use store bought minced garlic, onion,so you dont have to chop it fresh,

preheat the foreman, and put a piece of parchment on the grill,

lay the cutlets out, and smear the sauce over the cutlets,

now put another piece of parchment over it,

let it grill for 8 minutes at least, and turn the cutlets over and smear again,

let it cook for another 5-8 minutes, or longer if you like it well done,

but be careful because it does dry out.

i find that the cutlets get a really great taste, because the parchment doesnt let it dry out, and the foreman squeezes out most of the fat of the dressing. and you also dont have to clean the grill!

I was starving today and remembered that I read this, I took the mayonaise idea, and used the "Lean Mean Fat Grilling Machine" (cooks from both sides) grill

    I used:

1 bones, skinless chicken breast: Flattened
    1 tbs fat-free mayonaise
    The following spices to taste:
    Parsley Flakes

Mixed the spices with the mayo and used a pastry brush (or you could just use a knife) to spread the mixture on one side of the chicken breast, and placed that side down on the grill first; and then brushed the remaining mixture on the other half, close the grill and cook about 4 to 5 minutes.

Had it with a side of cooked veggies (Onions, garlic, squash, and zuchini) icon_smile.gif
