Let's not get off track, here, but I think that "Jungle Fever", in this case, refers to being drawn to any race or ethnic group which is different from oneself. The exotic. It, is NOT PC to use it in any racial context. I personally would never use it in any conversation, but then, that's me. One of my best friends in high school used to call me a "honky" and I called him a "chink", and we did it to get a rise out of other people (which we never did - foolish little boys that we were). But the point is, we loved each other like brothers, and if you can't pick on your own brother, who can you pick on.
As for my preferences, I've seen black guys that I drooled over, and white guys that I've drooled over, oriental and native american, as well. However, Italian men, Middle Eastern men, and East Indian men make my blood percolate (you guys probably don't even know what that means - it just dates me).
Now the question is why. Olive skin, to me, is a healthy color. It is the median in the 7 genetic levels of melanine in the skin cells. It just symbolizes health and vitality, and MAN, THAT'S WHAT I WANT!!!! That is the color level that white guys try to emulate when they go to a tanning booth. It is the level of melatonin that, I believe, would be the level eventually achieved if we had free intermarriage between races.
