The bread thread............

    What I want to know is, do you bake bread, and will you share your recipes here?

    I particularly would like to know wheat free ones.

    Well, I made fresh tortillas once and they came out really good, but they were a bitch to make. It was my aunts recipe .. it was hard work

    It was over 12 years ago I think! I don't remember the dough recipe. It was something simple like flour, a little baking powder, a little vegetable shortening, salt, water. I remember sweating a lot standing over the hot griddle. One day I will dig through my old papers and see if I can find the recipes.

    The rest is technique, making the dough balls, letting them sit and rise a little, rolling them out and putting them straight on the griddle. You have to roll them pretty thin because when you put them on the heat they draw back up. Then you need to put them straight into a tortilla warmer or something and cover them. When you stack them up covered they kind of continue to steam or something. Fresh tortillas are light years better than the pre-made ones you buy in the store in texture and taste.

    I am sure you can get recipes on the internet quicker than I can go visit my aunt in indio .. lol

    In fact the following recipe looks fairly familiar to me down to the griddle (comal) used. I noticed even the comment about rolling them out fairly thin.

    I've made challah, but too long ago to remember the recipe. Braiding the bread was fun, though.
