The textbook I'm currently studying out of for structural anatomy is "Trail Guide to the Body." It's massage focused, but it gives you the actions, and attachments of all the muscles.

"Strength Training Anatomy" by Frederic Delavier.

Great for identifying the muscle groups recruited in a variety of strength training exercises. Might not be exactly what you're looking for, but it's pretty useful if you're aiming to target specific muscles in your workout.
