I definitely had these thoughts run through my mind while looking. I've viewed profiles and have the suspicion that they are:
1. Completely fake - I've seen pictures of professional models being used. I mean, come on people.
2. Real face and fake body - The body pics are not consist at all.
3. Fake face and real body (well, not really, who the hell would do that?)
I do give people the benefit of the doubt for the most part unless it is blatantly fake.
It makes me wonder. Why the hell would anyone do this? Insecurities perhaps? Crazy maybe? Boredom possibly?

I didn't answer the actual topic question. Let me try again so that I don't go down as a thread derailer.
People make fake profiles in part or in whole because they spend their entire lives restricted by the way that they look. They understand that they are denied intimate access to certain people because they would never want to engage them based on the way they look. The desire to liberate ones self from restriction crops up in every area of society.People go camping to liberate themselves from the constraints of civilization. People go to parties and clubs to liberate themselves from pressure to conform to societal norms that they would frequently break if they could. People eat at the heart attack grill to liberate themselves from a world that is nagging them to be health conscious.
Think about why people play videogames. People want to experience things that they cannot experience in their real life, shooting killing fighting etc. They know that they are banned from doing all of these things in the real world.
People who make fake profiles are no different. Being someone attractive online allows them access to a world that they are consistently excluded from in reality. It lets them get a feel for what they were missing. It lets them talk to their dream guy without fear of being rejected based on their appearance. Some of the coolest people I have met online have been fakes. But when I found out they were fakes I wanted to be mad but couldn't. Because if I had seen the real them I probably would not have been as interested in talking with them initially and never would have gotten to know them. I realized that I can't be pissed at people for making fake profiles because I am a living example of why they do it in the first place.
I think there is also an element of vengance in using a fake profile because you realize that you are stealing time from shallow guys who will not get any pay off from the interaction. If attractive guys only talk to other attractive guys, and you get one of them to talk to you then you have created a small rupture in a system that has probably caused you a lot of sufferring over the course of your life time. So they have no mercy for the people they deceive.
