Unless it says "does not need to be refrigerated" on the packaging it goes in the fridge as it is not a dry good.

I usually do, but am not too worried about it. BBQ sauces contain alot of sugar, the shelf life is pretty long.

Yes, do refrigerate it. An easy rule of thumb is that if you have to break some kind of seal to open it, you should refrigerate the leftovers. If it is in glass of plastic, just leave it in the container. If in a can, change to glass or plastic.

Don't know about sauce recipes, but we were talking about marinating pork shops in grapefruit, sliced ginger and red onions tonight.

Who has a good, not so sweet, sauce recipe based on tomatoes?

I've never refridgerated BBQ sauce after opening it and there's never a problem with its flavour/taste. Personal preference really.

Depends on if it's homemade or not...

Ready made sauces bought on the shelf should be able to with stand a few hours out..

Homemade recipes should be refrigerated IMO

yeah there isn't preservatives in homemade stuff (usually) so it can spoil / go rancid since you're using fresh ingredients.
