Ground beef is pretty versatile. In itself it's pretty bland but you can mix it up with all sorts of spices, beans etc. One of my favourites is dolmas made with cabbage leaves, that way you get in some veggies as well. Or a stir-fry with vegetables, ground beef, soy sauce and sweet chili.
If you want to go Scandinavian: ground or thinly sliced meat (reindeer or game if you can find it but beef works fine), mushrooms (chanterelles for the proper flavour) and onions. Flavour with bayleaf, thyme and crushed juniper berries. Salt and pepper. Add cream or sour cream (or both) and perhaps a dash of honey. Simmer for a bit to let the flavours merge. Goes well with broccoli and green beans.
You can make some rather tasty bread/cake with ground almonds, an egg, salt and some baking powder. Mix it all up and put it the microwave until settled. Delicious with butter and a slice of cheese.
Overall without carbs what you have to look to for some variation is spices and ways of cooking. Grilled salmon with a herb salad tastes a lot differently than boiled salmon with melted butter and broad beans.
I did a LowCarbHighFat-diet for a bit and what kept me going was:
- pesto (really, it makes everything taste good)
- my grill
Of course, after a couple of months all I could think of was bread and pasta so I gave the whole thing up - unless one is starving, food should not be that important in a person's mind.
