Low Carb meal ideas

    I got a friend doing a low carb diet... he doesn't cook at all so I've been helping him get some variety in his food with new meals and desserts and stuff but I need new ideas.

    Anyone have any good low carb dinner or dessert ideas that you use?

    chicken and broccoli. vegetarian dishes. any type of lean meat and steamed veggies.

    Paleo= Old in Greek language. I will definitely check out this stuff. I generally eat very simple food, not complicated what so ever, even though I love gourmet food like hell.

    All the protein fluff I found had berries in it... wouldn't that be high in carbs? Good for high protein diet I suppose, but not so much someone doing low carb.

    Tonight I did a pot roast making sure everything was low carb ingredients with cauliflower rice. The rice was experimental but I actually really liked it.

    Based on a 40 carbs per meal plan
    Note: you can subtract fiber grams from carb grams

    For Breakfast:
    In the freezer section get frozen egg patties... 0 carbs
    Also in freezer section get fully cooked turkey breakfast pattie... 0 carbs
    Toast both slices of bread round... 15 carbs
    (Bread round 20 carbs minus 5 grams of fiber = 15 carbs)
    Put a slice or 2 of cheese on patties... 0 carbs

    1 breakfast sandwich = 15 carbs
    1 glass of Crystal Lite = 0 carbs
    1 small serving of fresh or frozen no sugar added strawberries with no carb sweetner = 15 carbs

    Total 30 carbs
    ------------------------------------------------------------------
    Lunch:
    Make or purchase at deli Chicken Salad.... 0 carbs
    Toast both slices of bread round... 15 carbs
    (Bread round 20 carbs minus 5 grams of fiber = 15 carbs)
    Put a slice or 2 of swizz cheese on chicken salad... 0 carbs
    1/2 Alvacado = 8 carbs
    1 small Apple = 8 carbs

    Total 31 carbs
    ------------------------------------------------------------------
    Dinner
    Cook 2 Hamburger Patties with cheese slice on each = 0 carbs
    2 slices of Bread Round... 15 carbs
    (Bread round 20 carbs minus 5 grams of fiber = 15 carbs)
    serve with Salad containing black and/or green olives, pumkin seeds, sunflower seeds, real bacon bits, cheese and any dressing... = 0 carbs

    dessert: 4 scoops of Low Carb Ice Cream = 16 carbs
    (You can subtract Fiber and Sugar Alcohol)

    Total 31 carbs
    ------------------------------------------------------------------
    Snack:
    Atkins Advantage Protein Bar
    after subtracting Fiber and Sugar Alcohol = 4 carbs
    (10 grams of Protein)
    ------------------------------------------------------------------
    Other Dinner ideas:
    California Kitchens Garlic Chicken Pizza
    1/3 Pizza = 32 carbs minus 1 gram of fiber = 31 carbs
    Before cooking add more diced chicken, more cheese, black olives, bacon bits = 0 added carbs
    ------------------------------------------------------------------
    Cooked Rotisseri Chicken = 0 carbs
    ------------------------------------------------------------------
    Carl's Junior Low Carb Turkey Burger = 0 carbs
    ------------------------------------------------------------------
    I'm diabetic and have to eat low carb for the rest of my life.
    My carb allowance is 40 carbs each for Breakfast, Lunch and Dinner.
    Plus 2 breaks during the day 20 carbs each.

    ok... maybe read the header and first message again. its a low carb diet my friend is doing a low carb diet I am cooking for him. :-)

    While the paleo diet is not low carb as its defining characteristic, I have without doubt eaten much lower carbs since being on it.

    Not just no processed items. If you strictly adhere to it you will have to stay away from grains, legumes, and dairy, you'll automatically cut out a lot of carbs.

    Paleo is short for Paleolithic. Its meant as a guideline to eat as our caveman ancestors did, that means you're not supposed to eat anything introduced to our diets after the agricultural revolution, only the stuff a hunter/gatherer would be able to get his hands on: protein and (good) fats, fruits and veggies, nuts and berries.

    You could make him a Salad Nicoise. Here's a recipe I've made and enjoy:

    Dressing:

    -- 1-1.5 Shallot (fine diced)
    -- 1-1.5 Clove of Garlic (made into a paste)
    -- 1 TBSP Dijon Mustard
    -- 1/2 cup Red Wine Vinegar
    -- 1 cup Olive Oil
    -- Salt (to taste)
    -- 1 TBSP fine chopped Parsley

    Add the ingredients from shallots to red wine vinegar and mix them together. Then slowly add the olive oil while whisking to ensure proper emulsion. Add a bit of salt and stir further. Then strain to remove the bits of shallot. Finally add your tablespoon of fine chopped parsley.

    You can use some onion if you don't have any shallots (they add just a hint of sweetness though), and you can use yellow mustard instead of Dijon. The standard vinaigrette is supposed to have a 3 to 1 oil to vinegar ratio but I tend to prefer a more tangy flavor so I tend to use a 2 to 1 ratio.

    Salad:

    -- Spring Greens
    -- 1 tomato
    -- 1 hard boiled egg
    -- Green Beans
    -- 4-8 oz Tuna
    -- some Nicoise Olives

    Cut the hard boiled egg and tomato into quarters. Blanch and cold shock the green beans. Each component should be individually, lightly sprinkled with salt and white pepper and then lightly coated with the dressing. Mix together or arrange as desired and viola! (The salad is supposed to have a waxy potato component but I left that out given the low carb request)

    Cool... thanks for the low carb suggestions. For the paleo stuff... maybe there is some other thread for people looking to be educated in paleo? but not me... my friend is doing a low carb diet, not the caveman diet.

    so any other low carb suggestions I'll take. :-)

    To me 20g of carbs from raspberries is low carb but what do I know ?

    So the big thing about "low carb" diets to those of us who have a sweet tooth is that we really do need to be realistic in understanding that we tend to be carb sensitive. I have learned where my body's tipping point is in regards to carbs. I am one of those guys who gets what I call "creepy crawly syndrome" when I don't eat the right intake of carbs. I get headaches, dizziness, weird sensations in my gut and tingles if I don't have at least some type of carb in a 48 hour period, especially if I'm working out on one of those days.

    Here's what works for me sugar wise:
    Wheat toast with A LITTLE "heart smart" plus A LITTLE Honey/Cinnamon
    A handful of Honey Bunches of Oats Cereal
    A class of Ice cold milk with a couple drops of Vanilla flavor, Strawberry flavor, or Coconut.
    Baked Apples with cinnamon
    2/3 Cup of Cherries or grapes
    Yogurt
    Dill Pickles (believe it or not, a couple spears will totally kill your cravings.)
    Brushing your teeth after meals.

    When I was a caveman in a previous life, I used to climb trees and steal eggs from bird nests. Jesus and I also used to steal dinosaur eggs and eat them too. When figs were in season we also ate figs. Remember that one time figs were out of season and Jesus cursed the fig tree? Those were the days. good times. good times.

    I think the guidelines for a low card diet is to not exceed 15g for the entire day. would make it tough to have completely carb-less meals the rest of the day.
