Would someone please fix me the best salad in the world?

    A tall order. You might as well ask what would the world's best dish contain.

    But for me, a good salad includes a variety of tasty greens, including arugula, and avocado slices, hearts of palm, and artichoke hearts. (There was a restaurant in San Antonio, Texas that used to serve all 3 of those last items in one of their salads -- YUM!) Some cherry tomatoes, usually no onion or cucumber for me (indigestion issues), perhaps some shredded cheddar cheese.

    If I want protein then crumbled or sliced hard-boiled egg, or chicken or diced ham, perhaps prosciutto shreds, maybe some small shrimp, even a bit of anchovy. I leave out croutons, just not to my taste. For dressing I stick with simple vinegar and olive oil for health reasons, and I really do like the taste. Lately just wine vinegar, not balsamic, gotten kinda tired of it.

    I've had much more exotic salads, but my tastes are actually rather simple.

    Baby spinach and other baby green lettuces, walnut pieces, sliced strawberries, sprinkling of crumbled blue cheese, diced chicken breast (warmed). Topped with some raspberry vinaigrette dressing.

    Amazing. Take that to work frequently for my lunch. And now I want it for dinner!! icon_biggrin.gif

    Lettuce made of Prosciutto. Bacon made of bacon. Croutons made of thick cut bacon. Cheese. Cheese. More Cheese. Big Mac Sauce.

    Atkins friendly.

    For the less atkins friendly, you can substitute the thick cut bacon croutons with cheesy garlic bread pieces.

    The other night at a fancy-schmancy restaurant, I ate one of the best salads I've ever had. It was greens topped with parmesan-encrusted goat cheese and bacon.

    Depends on the season and what it's for. One of my favorites is baby spinach, blueberries, goat cheese, and slivered almonds with blueberry vinaigrette. During the summer I really like orange, arugula, and fennel. But honestly, I do love a good classic cobb salad.

    I love a good mix of just about anything...but here's one I tried for a dinner recently...and it's amazing.

    Roquefort Pear Salad

    Spring salad greens
    3 pears, peeled, cored, and chopped
    5 ounces crumbled Roquefort cheese
    1 chopped avocado
    1/2 cup thinly sliced green onion

    1/4 cup white sugar
    1/2 cup pecans

    Dijon vinaigrette:

    1/3 cup extra virgin olive oil
    3 tbsp red wine vinegar
    1 1/2 tsp white sugar
    1 1/2 tsp Dijon mustard
    1 clove garlic, chopped
    1/2 tsp salt
    Fresh ground pepper

    1) Melt sugar slowly, caramelize pecans. Let cool and break them into pieces.

    2) Mix dressing.

    3) Combine everything, toss and serve.

    The flavor combination of pears, Roquefort, sweet pecans, dijon and vinegar are out of this world.

    Now do you want a good salad that is still healthy? Or do you want an amazing salad that you might as well substitute for a Big Mac. It can go either direction haha

    Baby greens mix (Mesclun) fresh from my garden. Arugula, leaf lettuce, romaine, endive, radicchio, red russian kale, swiss chard, and mizuna washed and served with a light olive oil vinaigrette.

    There was one week in the summer where I bought 2 lbs of salad mix like this from a farmer's market. It was delicious enough I would eat it for breakfast and before going to bed. When you have fresh, yummy lettuce, there's no need for fancy toppings.

    My personal favorite:

    -Spinach
    -Carrots
    -Goat Cheese
    -Pomegranate seeds
    -Cucumber
    -Salmon
    -Peppers
    -Red pepper flakes/curry/flax seed
    -Balsamic Vinegar


    Has tons of different flavors in every bite and its awesome!

    The Sausalito Chicken Crunch Salad

    Here's the blueprint:

    shredded cabbage
    shredded romaine lettuce
    shredded iceberg lettuce
    cherry tomatoes
    jicama
    red onions
    queso fresco
    peanuts
    chicken
    cilantro
    tortilla strips
    . . . all tossed in a cumin vinaigrette.

    I usually get some field mix, grill up some flank steak (or saute some shrimp), make a light vinegar and olive oil dressing tossing it with either walnuts or almonds, sliced strawberries, and a spot of feta cheese.

    I had a really tasty salad recently at a new friend's place (lives on the Blarney Estate - of kissing the stone fame)

    Baby spinach
    Arugula
    Young Dandelion greens
    Diced red and yellow peppers
    Pine nuts
    Sauteed Asparagus (cooked in the remaining bacon grease)
    Fresh peppered crumbled chevre
    Warm diced bacon mixed with olive oil and balsamic
    Light soupson of lime and fresh garlic

    Yummy. (He was too.)
