Depends on what you're up for. There are some decent nightclubs in the area- I've been to the Gay 90s a few times, and although it is kinda trashy and infested with straight people, I still like to go there. I also heard good things about Jetset and The Saloon, but I haven't gone myself. Also, the Mall of America is there and it's very popular with tourists, since it's one of the biggest malls in North America (and just a quick light rail ride away). Also, the music scene and theatre scene are excellent. The Guthrie put us on the map, but tickets can be pretty pricey. On the flip side, the University of Minnesota puts on shows also- and these actors work with the Guthrie. Events can be found here: https://theatre.umn.edu/events
Also, the Old Spaghetti Factory nearby on Park and Washington is a very nice place, or if you want to go to someplace more iconic, cross over to St. Paul to eat at Mickey's Diner on 7th Street in Downtown.
