Gluten Free Foods? Help me do some product research...

    My director has put me in charge of developing a Wheat Free/Gluten Free line of products for Tree of Life's private label brand.

    Anyone here on a gluten free diet that would be willing to answer some questions for me? I need to know things like...

    -What products would you like to have in a GF food(s)?
    -What products would you like to have taste better?
    -What products are great but too expensive?

    Any input would be greatly appreciated.

    Newsweek had an article about GF food and Celiac, within the last year i think. they had a bunch of websites for ordering foods and recipes as well. try looking through their database.

    I've never been diagnosed with celiac but I get bloated as far as my belly can stretch and feel so wiped out when eating oatmeal, corn chips, not as bad with wheat sometimes. Milk does me in too. So I drink Rice milk and have Rice Chex, Rice vinegar and potatoes. When you have to stay away from wheat, rye, oats, barley, and corn, it leaves alot of food off limits. Like ketchup and anything made with vinegar made from wheat. Soy sauce, I started out trying the frozen breads made with nut and rice flours. Very thick. Someone hopefully will make some bread that is light and has a crust. I'm gonna bake some russet potatoe skins just to get that crunchy taste I like from toast.
    Ya please make a Hellman's style mayo with rice vinegar. Homemade just sucks.
    Ketchup too.
    I saw some pasta made from artichoke flour and didn't see the durum semolina(wheat) on the back. Wish they would of matched that with rice flour instead. Rice pasta is not bad.
    I saw spring roll wraps made from rice flour at fresh fields(quite a distance) Wish I could find more gluten free foods at shopper's.
    I'm gonna start experimenting with baking things so I'll have to post recipes that work out if there is any interest.

    I'm doing gluten-free as part of my weight loss plan and I'd love to find a crunchy, unsweetened cereal.

    My Celiac friend across the room says, "There's no way to narrow down which are too expensive, they're all too expensive."

    Specific things they'd like to see, "biscuits! no one has biscuits!" and donuts

    For tasting better, "bread, pasta" "and gluten free beer should definitely taste better, it's gross."
