Chicken: What to do?

    So, I just bought a bunch of chicken breast. What's your favorite thing to do with chicken??

    I like to keep it simple. Just grill it in a griddle pan. Then sprinkle some Mrs Dash afterward. Then eat it with a side of rice or veggies. Another thing I used to do was wrap each chicken breast in foil, sprinkle some herbs/spices, then loosely close it up. Then bake them in the oven. You can also throw some sliced veggies in there with the chicken and let the flavors absorb through.

    Baking chicken is probably the easiest and less messy way to cook chicken in bulk. But I don't like the texture of the chicken much. So I prefer grilling it in a pan or over an open flame.

    You can also take the cooked chicken, slice it up, and add to a salad. Or make tacos/burritos.

    Get a steamer. Put it in with some diced yams and steam them together.
    Boil a bunch of water and place triple washed spinach in it. That's what I eat when I'm cutting.

    I put it in the crockpot with some spiced apple cider, low sodium/fatfree chicken stock, garlic and fresh rosemary. Hopefully that works out.

    Fajits!!!

    I make fajitas all the time. I'll end up using low carb tortillas or I'll skip the tortillas all together.

    I slice bell pepper, onion and cook those with the chicken along with garlic, cumin, basil, paprika and anything else I feel like throwing in the pan.

    I also make a lot of stir fry. Dice the chicken and throw in some squash, zucchini, onion, bell pepper in a wok or whatever. Eat with a side of brown ride.

    I'll put a couple of cans of Campbells condensed mushroom soup into a small casserole. Add some salt & pepper, and sometimes a little poultry seasoning if I have some, perhaps some parsley flakes or other herbs.

    Then I put the the skinless breasts in, usually already diced, cover and bake. A small casserole will do fine in a countertop oven, but I've never tried a microwave. I cook around 325F for 30-45 minutes after it begins to bubble.

    I also use one of those countertop electric grills, with top & bottom elements, and that'll cook much quicker, mere minutes. I sometimes marinate a little beforehand, and use a commercial bottled BBQ sauce.
