muscly-fat type guys. Some would say 'muscle-bear' I suppose.

I think a good way to explain it: there was (might still be I rarely watch TV anymore) the 'Worlds strongest Man'. Most of them were thick,bulky but not body builders with near 0% body fat and veins sticking out all over. They have muscle, but its under a layer of flesh, so they have more mass, but far less definition.
The highly cut, 0% body fat looks more unnatural than a guy who has muscle under a nominal layer of fat. At least to me.

This personal preference is 'hard won' I had a near 5 year relationship with a guy who wanted to look like the Incredible Hulk sans the green skin. He was heavy into the 'cut and definition' and pretty much turned out to be pretty much an a-hole. He ended up talking with his fists, unfortunately he liked to talk a lot.
Due to him, I see lots of cut and definition and I immediately think back to the days when I was with that guy. I connect his personality with the body.
BTW bodybuilders who compete often gain a lot of 'fat' off season. They do highly strict diets to shave off all the sub-dermal fat in order to be on stage.
Arnold was around 235# for competing, off season he was on average 260-265 That's 25-30 pounds of fat. Others have even more distance, around 50 pounds.
Fat does play many crucial rolls and should not be ignored. Even intramuscular fat (that which gives red meat its marbled appearance) also plays a roll in over all muscle health.
