I make a really easy chili - which I am eating now.
Heat some Extra Virgin Olive Oil in a big soup pot. Toss in 1/4 cup or more of chopped onion (I just buy the frozen chopped onion). Let that sweat out a minute or two while you slice a container of baby bella mushrooms. Toss those in. Do not salt and pepper yet. Let the mushrooms get browned up.
After they have, toss in 1lb of 96% ground beef - or ground turkey if you prefer. This is when I add salt, pepper, cumin, and chili powder to taste. (Sorry, I don't have actual measurements. I like things milder than most, so you will just have to experiment. Go light, you can always add more, but can't take it out). After the meat is browned, add in 3 cans of beans.... (Kroger grocery stores have an organic tri-bean blend that I love - black beans, pinto beans, and red kidney beans, you you can add what you like). Plus, two to three cans of diced fire roasted tomatoes.
Add more chili powder and cumin to taste.
I know some people don't like beans in their chili, but this does let you stretch the calories out a bit. I make this all the time and freeze it so I can eat it.
I like to serve mine with the 35 calorie wedges of laughing cow cheese.
This will be between 300 - 400 calories per serving.
