Copied from a 1950's Betty Crocker cookbook. Redonculously moist. I prefer vanilla with a homemade vanilla frosting.

2 ¼ cups SOFTASILK Flour
1 ½ cups sugar
3 tsp. baking powder
1 tsp. salt
½ cup soft shortening
1 cup milk
1 ½ tsp flavoring
2 eggs

Heat oven to 350°. Grease and flour two layer pans, 8 or 9 x 1 ½ “ or an oblong pan, `13 x 9 ½ x 2”. Measure flour by dip-level –pour method or by sifting .
Blend flour , sugar, baking powder and salt. Add shortening, 2/3 of milk and flavoring. Beat 2 minutes, medium speed on mixer or 300 vigorous strokes by hand.
Scrape sides and bottom of bowl constantly. Add rest of milk and eggs. Bear 2 more minutes, scraping bowl frequently. Pour into prepared pans.
Bake layers 30 – 35 minutes, oblong 40 – 45 minutes. Cool. Finish with filling or frosting as desired.

This was started three months ago for a birthday party I hosted back in February. It's a bit late but I do appreciate the great ideas.

This isn't chocolate - but my family favorite birthday cake growing up was my grandmother's peanut butter cake. We're still not sure exactly what she did that made hers better, but

It's a regular yellow cake mix, but she adds a little peanut butter to the batter.

Then it's a peanut butter frosting that she makes with peanut butter, powdered sugar, milk, and I think some butter. It's a rich decadent frosting.

Everyone goes crazy over that cake. Someone makes one every Thanksgiving and Christmas now and it's usually fought over. Unfortunately, I haven't had a piece in years. My mouth is watering now.

I will try to find the exact recipe if you're interested. -- If you wanted to make it chocolaty, I have seen it made with a chocolate cake instead of yellow.

My baking skills are sub-par, at least nothing compared to my other cooking skills. But the most memorable birthday cake I had was on my 20th birthday when my two-year, unrequited crush made a chocolate mint cake for my birthday. It was a two-layer chocolate cake with a layer of plain mint icing in the middle and chocolate mint icing on the outside. It was the best cake ever in terms of taste. Also, it was the one thoughtful thing he did during my two years of drooling over him, lol.

I have always had rave reviews for a CHOCOLATE MAYONNAISE CAKE WITH CHOCOLATE CREAM CHEESE FROSTING. I do three layers and put a layer of mini chocolate chips between each layer for a little texture. I am requested to make this particulat cake for all six birthday at work. It is the most moist cake you will ever have.
