Before you do something you'd regret, talk to other waiters at other restaurants. Find out how they broke into the finer establishments. Did they take classes in culinary science at the local college? I think it's a mistake to assume it was just "connections" that gets you into a better restaurant. It's knowing how to be a good server in a place like that.
I know actors who got their starts by being in the right restaurant at the right time, yet they did not "know" anyone to get into the restaurant business. They educated themselves at UCLA or a local junior college or a culinary school.
I agree with others who posted here. While $5000 is a lot of money, and it would be the expedient thing to do to grab that offer, it's liable to be a mistake that will haunt you the rest of your life. It may be more difficult to take other more difficult approaches, but, man, you are so young. Your life is ahead of you. Don't mess it up by taking the piece of candy that is easy to reach for.
