Gluten Free diets

    I've decided to try an elimination diet to attempt to correct some symptoms I believe to be caused by a gluten allergy/celiac disease. I figure its cheaper than a doctor visit and probably a healthy decision to make regardless. I was hoping some people who are gluten-free would have some books to look at in order to prepare gluten-free meals. I look at all these ingredients that I'm supposed to avoid but I was hoping to find a book that told you step by step what you need. Once I understand what I need to look for I can start to branch out and find meals on my own.

    So any advice or references would be greatly appreciated.

    I went on a gluten-free diet about 2 months ago. The changes are amazing. I feel much more alert and focused, and have lost the little belly fat that wouldn't go away no matter how much cardio/exercise I did. My advice in regards to a diet is to avoid processed foods as wheat is generally hiding in places you wouldn't expect (like the vitamin I take that I was still taking for 2 weeks after I started the diet!). Whole foods are the way to go.

    i've been gluten free for a couple years now. once you get through the first thirty days or so it gets pretty easy. your body resets and so do your routines. for people just starting to make the change, i usually recommend this website: http://whole9life.com/. It's got tons of goof information, support groups and even cookbooks.     Go gluten free. We have fucked up our foods so badly, this is all part of people getting from what should be basic grains. Weird.

    "The Paleo Solution". To sell you on the idea, the author lists absolutely everything to eat for one month ( with recipes) . Other books kinda leave ya hangin about implementing them. But Paleo is really a lifestyle not a diet . And it's radical cus it's a full fat diet.

    My experience exactly. The belly fat that exercise can't touch disappears after switching to a primitive diet.

    I'm gluten-free pretty much. I do have oatmeal in the mornings, and as you may know, oatmeal may or may not be contaminated by a bit of gluten during production (in forms of wheat, rye or barley), however, since I'm fine with that amount.

    As far as pasta and bread goes, I get those gluten free, and that's pretty much all the gluten filled stuff I eat cuz I don't really eat any processed foods.

    There's a rice substitute for practically everything made with wheat. I also recommend removing all dairy from your diet. There are also substitutes for practically everything dairy. It took me years of trial and error to figure out what foods kept me healthy. Of course there are many books on the topic, but I did a lot of online research. This allows you to quickly find lists of gluten free foods. Eating any more than your body needs to survive is also a huge disease contributor. (Seems like an obvious statement. But on here, many people are at their ideal body weight.)

    The Paleo Solution
    It Starts with Food
    Wheat Belly

    To the OP, I think experimentation is the best way to find out what foods agree and disagree with you. I recommend reading It Starts with Food that lays out a 30 day plan for testing these foods. The book explains in very layman terms why certain foods (processed sugar, grains, legumes, seed oils) are bad for you. I did the Whole30 as described in the book and found that I'm not lactose intolerant at all like I thought I was and that it really is the gluten that was giving me digestive problems. Paleo Solution gets a little more sciencey but is also a great book.

    Forgive my regurgitation of what I've read in case I get something incorrect, but gluten as it's digested in the gut, damages the walls of your intestines increasing the permeability of the intestinal wall. This allows things that aren't meant to pass through to pass through.

    For me personally eliminating gluten has caused my IBS and acid reflux to go away. I also feel much healthier overall. I used to often feel like crap for no reason that I could figure out. Not sick per se but not healthy or well.

    I think a lot of people write gluten-free off as a fad diet. My best friend does and we've got into a number of arguments about it. Different people have different tolerances to gluten. If you think you have Celiac then you should definitely try this. I think the best argument one can give for going gluten-free is to just try it for 30 days, and see first hand if it's for you.

    Thanks for all the input, guys. I went ahead and ordered The Paleo Solution and I'll read through that before buying another. Hopefully I can make it happen!

    I ditched wheat a few months ago. I haven't really noticed any changes, but I had a pretty healthy core diet anyway.

    I would caution you to look deeper into anything "gluten free". Sometimes other starches are substituted which cancel out any positive health benefit (other than not aggravating Celiac).

    Check out nut flours like almond flower. Also check out ancient grains such as "teff".

    I think that wheat/gluten is a problem for a lot of people now because we've genetically modified most of our grains. Wheat, corn, rice, oats, where does it stop. Where's GreenHopper, he'd know more about this.

    DO IT!! Paleo, or Wheat Belly Diet...
    as long as it is natural food, meat, veggies, you can eat it. I only miss Garlic toast w/ pasta... but i got over it!

    I've trialed the FODMAP with patients before. It was designed for management of irritable bowel syndrome, and is based on a theory that IBS is a issue with absorption of carbohydrates. FODMAPs [Fructans (in wheat, onions, and artichokes), Galactans (in legumes, cabbage, and Brussels' sprouts), Lactose, Fructose, Sorbitol, Xylitol, Mannitol], are fermentable carbohydrates, that are broken down in the gut and produced gas byproducts. Glucose is not a FODMAP, and is absorbed quickly without fermentation. Although there are some detailed versions of the diet, in essence you would get the effect from any basic low-carbohydrate diet. The Paleo, non-gluten, or Atkin's would all indirectly have the same effect.

    Jesus people, you look for any chance you can get to plug Paleo, don't you?

    I have a culinary degree, and am working on a degree in dietetics. I'm not the gospel truth, but I rely in primary literature, not anecdotal assertion when looking at these things. Make sure you do the same.

    There's a few people here who know what they're taking about. It's not hard to find out who. (Note: if they throw out Paleo, blood type, or other fad diets as the universal solution to everything for everyone, just ignore them)

    Eh.. I stopped eating Gluten a half year ago. While I stopped eating pasta and all that. I do eat gluten-free pasta once in a while.. Soo.. I guess I make the same food as before just with the gluten-free version of it.
