Alternative all purpose flour ? (moderately gluten free)

    Not that I have anything against gluten but the benefits associated with incorporating more variety from alternative grain flours are astounding. The following are what I have on hand and Im trying to figure out a ratio of each that will allow me to use it with a result similar to straight up white whole wheat flour.

    Teff
    Buckwheat
    brown rice
    spelt
    garbonzo
    and white whole wheat

    Ive tried incorporating quinoa before but all it seemed to do was add a bitter taste then when too much brown rice is used the result is dry.

    Who has some ideas of what would create a balanced flavor ?

    Flavor being one thing, but what do you want to do with the flour once you have the blend?

    Bake cookies, Pizza, make pastry? icon_smile.gif

    The different flours are all good or bad at different things..

    Buckwheat and rice flour may be a reasonable combination.

    If you can get your hands on it Corn, Potato, Soy or Sorghum flours all work reasonably well for some things, not so well for others.

    When working the proteins in the different flours, they don't work like the gluten, and some need to be rested differently.. some won't rise well or be as elastic (so lend themselves to bread or pastry that doesn't need to flex, or some pastas like gnocchi)

    Hey Gordon I heard there were some punctuation marks for sale in that Brazilian department store in your profile picture maybe you ought to buy some so we can all read your posts better that would be a nice thing to do for the RJ community really.
