    If you had to choose between the following, which one would you choose

    Bread
    Noodles
    Rice

    Rice, it isn't wheat nor does it contain gluten. I do love my pizza however so I can't replace all the wheat from my diet haha =)

    I agree about rice, because it is non-processed and has no gluten... but all three would a concern for a diabetic because of the glucose spike. My recollection is that basmati has the lowest glycemic score.

    On my low-carb diet, I am down to 40-55gs of carbs a day, so it's not a question of the glycemic index, it's carbs in general.

    I use good fats (olive ol, coconut oil, nuts and seeds) for my energy sorce.

    Aside from threshing. Those stalks are full of fiber, though. icon_smile.gif

    I'd answer bread. There are lots of good, inexpensive, non-wheat pastas, but I haven't yet found a viable substitute for bread.
