    Green Beans with Almonds

1 1/2 pounds fresh green beans, washed and trimmed
    1 cup silvered almonds
    1 teaspoon melted butter
    1 teaspoon sweet paprika
    1 teaspoon extra-virgin olive oil
    1 tablespoon butter
2 shallots, minced (about 1/4 cup)
1 tablespoon chopped fresh flat-leaf parsley
salt and freshly ground black pepper

    1) Bring a large pot of slated water to a boil. Cook the green beans for about 5 minutes. Drain and place the beans in a large bowl of ice water to cool quickly. Drain again and set aside.
    2) Preheat the overn to 350 degrees F. On a rimmed baking sheet lined with foil, thoss the almonds with the melted butter and paprika. Spread in a single layer and bake for 7 minutes, or just until fragrant. Do not let the almonds burn. Remove from the owen and set aside.
    3) In a medium pan over medium heat, warm the olive oil and butter. Add the shallots and saute for 2 to 3 minutes. Add the green beans and saute until warmed through. Remove from the heat and add the parsley. Season with salt and pepper.
    4) Place the beans in a serving dish and garnish with the toasted almonds. Serve immediately.

You added butter (and olive oil). What's not to like?
