How much do you eat each day to keep your mass on/keep growing?

I've been struggling to put on a lot of mass, and then when I try to shed fat and tone, I can't keep the mass I've built and start looking all skinny again. It's really hard to maintain a higher lean mass once I've packed it on.

What do you eat during the mass-gain part of your workouts?
What do you eat during the shredding part of your workouts?
How does your rep range, intensity, number sets etc change between these two "modes" of training?

Thanks for all the advice in advance, guys. icon_biggrin.gif

I just read this the other day and really liked it. It explains the basics of the cutting/bulking cycles with suggestions for calories, exercises, etc.
