Good flavor combinations when cooking chicken?

    What are some of the best ways you've had chicken prepared? Garlic is always a good flavor with chicken, as well as citrus fruits (e.g. lemon-caper chicken, orange chicken, chicken tacos with lime/cilantro). What are some other good flavors to cook with?

    Chicken breasts
    2C Chopped tomatoes
    2T Capers
    2T Olive oil
    2 cloves Garlic, crushed
    2T Soy sauce
    Black pepper

    Bake the chicken, soy sauce, and pepper (covered with foil) in a 350 oven, for 1 1/2 hours.

    Saute garlic in olive oil.
    Add chopped tomatoes and capers.
    Simmer for a little while.

    Add tomato mixture to chicken.
    Bake a little longer (without the foil).

    Thyme is amazing. Brush the chicken with a little butter, salt and pepper, then lots of thyme. Fresh or dried. Nice rich herb flavor with a hint of lemon. Or you can substitute olive oil for the melted butter but a little butter won't kill you.

    Chicken is one of the few meats I'll season with tarragon..... and lots of butter

    My favorite of late is simmered in coconut oil with a bit of curry and mustard and tri colored ground peppercorns.

    I like to season chicken with teriyaki sauce, garlic, ginger and red chili paste.

    Chicken.... pretty much takes on any flavor well....sweet and sour, pesto, fried, thai peanut sauce, wrapped in bacon/proscuitto,curried ... the possibilities are endless

    I eat so much chicken its insane. I have mixed all kinds of stuff. Lately, I will take several pounds of chicken and cook it all day in the crockpot with some leftover champagne and herbs.... its delicious.

    Coat boneless skinless breasts in FF Yogurt, then roll in oat bran flakes. Put in a baking pan with about 3 Tbsp Olive Oil. Put in oven on 425 for about 30 minutes, turn half way through time. Viola, oven fried chicken.

    You can add all kinds of spices to the oat bran to pep it up a bit.

    There is indeed a chicken recipe with cocoa in it and it is really good. Can't remember the source, though.

    Chicken Souvlaki
    Tangerine Chicken and Prawns
    Spicy orange chicken

    and the list goes on

    This is a good marinade (similar to Qdoba Grill recipe)

    Juice of 1 orange
    Juice of 1 lime
    2 T vinegar
    2 ts cumin
    1 ts oregano
    1 ts ground pepper
    2 dashes chile powder
    1 can chipotle pepper in adobo sauce
    Some chopped cilantro

    After marinating for a day or overnight, grill and use on tacos, quesadillas, or in burritos.

    I marinate chicken slices in either hoisin or sushi sauce with ginger. It cooks up quite tasty.
