Suggest a cake for me to bake!

    I haven't done much baking recently (which for me is like... one week of not baking). I kinda want to do something a bit grand, so I figured I'd bake a cake and share it with family / coworkers.

    I was thinking some sort of lemon-raspberry cake with raspberry jam filling, but if anyone has any suggestions I'd love to hear them!

    PS: It can't have chocolate. Dad's allergic to it.

    Getting decadent without chocolate is a tough one icon_smile.gif

    In my experience, it's not always easy to get the full impact of lemon in lemon cake (depending on the recipe, sometimes you can hardly taste it). I'd recommend going with a lemon curd for the filling and save the raspberries for the topping.

    A couple of alternatives might be a white cake with custard filling and raspberry topping or a spice cake with cream cheese frosting.

    Oh... a tip... for raspberry filling - Smuckers makes a raspberry syrup that gives the filling a much richer taste than fresh raspberries, which can be a little tart and runny. I've seen it in several recipes and it works great for cake fillings and frostings, where you want sweetness and thickness. It's usually sold at the grocery store near the maple syrups.

    (I'm the baker in my family, I make most of the desserts for family outings)

    Hahaha...I myself have a degree in Culinary arts, and am no stranger to the world of baking. I must say a make a DEADLY carrot cake...and tres leche...and dark chocolate bacon cupcakes...to name a fewwww!

    I just watched that Django movie.... and have been crazing 'White Cake' ever since. I don't even really know what 'White Cake' would taste like.

    White cake, yellow cake I believe its the same.

    No white and yellow cakes are different.

    I think yellow has a lot more butter in it and has a richer flavor.

    OP, find the February (I think) issue of Southern Living magazine at a library if you can. Loads of lemon recipes. It is January, February or March of this year--2013.

    I am also fond of Orange Chiffon Cakes. If you decide to go that way email me and I will get you the recipe of the frosting, which is a bit different.

    There is a super easy cake that you make in a 9x13 pan. One box of one-step angel food cake mix and a 20 oz. can of crushed pineapple with juice. Just mix well and bake. Incredibly good!!!!

    there are some good suggestions here, I agree with the carrot cake, giving the fact its still cold out and easter is around the corner..

    Now since I'm also a pastry chef, please forget about red velvet or devils food, obviously b/c they both contain chocolate, or a chocolate derivative.

    also since spring is around the corner, go for citrus and berry flavors. How about a raspberry white cake with a lemon curd buttercream or lemon curd bavarian cream filling. Top those off with a citrus zest buttercream and fresh berries would be fantastic... or do a basket weave piping on the sides and top with fresh berries! I'll give you any recipes you want

    Poppy seeds will not make you test positive for opiates. They're related, but do not contain the chemicals.

    May I suggest - Orange Poppyseed cake !
    Or my favorite - Baked Raspberry Cheesecake !
    If a pie is in your mind .. Try Lemon Meringue Pie .
