    I like making Thai curries. Occasionally I make my own curry pastes, but it's such a pain in the rear that I rarely do. I just use the canned and adjust with different spices.

    I tend to use more meat and complimentary veggies (often Thai eggplant for green curry chicken), and less coconut milk - usually a small can (around 6 oz).

    I also use a lot of toppings. Cilantro, basil, chopped peanuts, fried onions, fried garlic, limes, chopped scallions, chopped peppers, extra fish sauce. Yum.

    Try making spaghetti or fried rice green curry with chicken. Nice.
