Dating - going out on dates together but not quite official yet
Seeing someone - official (monogamy is implied)
    Committed - official and monogamous
I use boyfriend instead of partner because it is a less ambiguous term.

Dating - Going out on dates, getting to know each other.

Seeing Someone - Dating with no interest in seeing someone else but not:

Committed - Words have been spoken, commitment made to each other, not yet agreed to the long term but working towards it.

Boyfriend - I think boyfriend is the same as committed but Partner is announcing the long term is agreed, essentially like married. I agree the term is ambiguous but the upside is when you tell someone you are partners, like asking for family membership at the gym or talking to a realtor while looking for a house, you frequently get to clarify that this is the guy in your life and then watch the reaction. I'm partners with a much younger guy so the reaction is fun to watch. I've not been disappointed yet. Usually it is startled, then a big smile. And some stumbling around trying to find nice words. I appreciate that.

    For me
Dating - Being in a relationship with someone that is continuously contructive. ( you`re still learnign and finding out if they are the right person for you on numerous terms)
Seeing someone - Not in a relationship with the person but in the beginning stages of Dating. A bit more of an evaluation before taking a shot at it, from my perspective.
Committed - Having promised your feelings and hopes towards the one you have chosen to care for. Having chosen not to betray that person upon the rules of your relationship and to have officialy announced ( not really public but you get the idea i hope) that you two are , as the word means, committed to each other. Kinda like a great bond.
Um.. boyfriend - partner? It will vary depending on the type of relationship. Those 2 terms could honestly be mere variants of Dating someone or Seeing Someone so not sure how to put it. It mostly ends up being a question of perspective. At least, that`s how i feel about it.

There's a certain amount of overlap among the terms, depending on who you ask and when you take into account different types of relationships.

Dating- usually seeing someone with some sort of romantic or sexual overtone, maybe had sex

Seeing someone - gone on (at least) a few dates with someone, maybe had sex, no commitment, he's special to you but no commitment. Could possibly refer to a fwb or fb if trying to be vague, but is usually referred to some sort of romantic relationship and not a purely sexual one.

Committed- if monogamous, then no dating or sex outside the relationship.
if open, then serous about the guy but ok to have sex with others (probably set up some ground rules).
if poly, then have a serious relationship but ok to be dating others (may have set up some ground rules), maybe a triad relationship.

Boyfriend/Partner - talked about being serious, at some point had some discussion about what the relationship means.
Some people prefer partner over boyfriend to emphasize a higher level of commitment, possibly because they can't legally get married. Some are in a place in their lives where they don't want to sound like they're going unchaperoned to the homecoming dance with the boyfriend.
