Barbeque Chicken Pizza

    We got a recipe forum now! I've heard others suggest it more than once, so it's nice to see.
    This recipe was in Men's Health magazine, and my partner and I love it. I use Sweet Baby Ray's bbq sauce and sometimes add mushrooms.

    Barbeque Chicken Pizza
    (Men’s Health)
    2 Tbsp barbecue sauce
    8" Boboli pizza crust
    1/4 c canned diced tomatoes with chili peppers, well drained
    3/4 c precooked chicken, mesquite flavor
    2 Tbsp sliced scallions
    1/2 tsp cilantro
    1/4 c grated smoked mozzarella
    Spread the barbecue sauce evenly over the pizza crust. Add the remaining ingredients in order.
    Bake in a 450ºF oven for 8 to 10 minutes.
    Extra credit: Add 1/4 c mixed-color peppers for a vitamin C boost.
    Eat with: A simple tossed salad--mixed greens, sliced onions, and cherry tomatoes
    Makes 2 servings
    Per serving, including salad: 324 calories, 21 g protein, 41 g carbohydrates, 8 g fat (2 g
    saturated), 3 g fiber, 835 mg sodium

    This one is truly simple.

    One can of organic vegetarian chili from Trader Joe's
    One cup of cooked brown or wild rice
    A bowl
    A fork

    Makes 2-3 servings. You get massive fiber and protein.

    Plus no meats and you would never know it.

    If you don't have trader Joe's, find someone who does who can send you their stuff.

    ok - new variant.

    Take the same rice.
    Pour Trader Joes Organic Creamy Tomato Soup.


    High is same fibers. Low in fat. Organic!

    Trader Joe's is great! the one by us is always packed and the parking lot is small, so i'm glad it's walkable. grab a bottle of three buck chuck wine and you have yourself an evening! icon_lol.gif
