Told this one here before: for Valentines Day I arranged our dining room table before he came in, with a red heart containing candies I individually selected, red roses, red & white balloon, and a white teddy bear holding a red heart (he collects bears). The card, also in red & white, pictured a table for 2 on the front, with champagne glasses.
Inside the card was attached a plastic gift card for his favorite restaurant, and next to it I had written that we had reservations in an hour. The gift card was actually a dummy they gave me, just to display their name, because I'd already paid for the meal the day before.
Once we got there he found our table waiting with flowers, and champagne on ice, plus champagne glasses set out, the table made to look like the one pictured on his card. During dessert, following a lovely meal, the singer they had that night came over to our table as prearranged to serenade him with a song I had chosen.
While singing she surprised him with a wrapped gift I'd dropped off the day before without his knowledge, so he wouldn't see me carry it in with us. And I thought it was more fun to have her present it to him that way than me. The whole dining room was naturally watching her sing at our table and broke into applause as he took his gift, straight & gay couples alike. Inside the gift box was a wristwatch, another item he collects.
When all was finished I got up to leave, and he said we hadn't received the check yet. I told him it was already paid, including the tip, no check required, we were free to leave. People were congratulating us as we passed their tables, and asking if this was also our anniversary. It wasn't.
This last Valentine's Day wasn't a surprise, because I gave him a Caribbean cruise, which required some preplanning by us both. But I had little surprises for him onboard the ship, including, yep, a teddy bear and a wristwatch.
