People are always talking about bacon, and rightfully so, but what about pancakes. I am a huge fan of brinner, so I am always looking for new ways to make a stack of flapjacks.

How do you like 'em? Do you like them thin and light, fluffy and airy, thick and dense? Do you like them with those amazing crispy edges? Do you use syrup, peanut butter, jelly or jam? Butter or margarine? Do you mix things in or do you let the batter speak for itself.

My favorite pancakes have cinnamon, nutmeg, and orange zest mixed into the batter. I like 'em fluffy, but with crispy edges. I usually put fresh strawberries and bananas on top and then drizzle on some honey. And a side of bacon and some fresh OJ or ice cold milk and it's like heaven!

Yum. I like regular buttermilk pancakes, drowning in maple syrup.

But I also like the gingerbread pancakes at Kerbey Lane.

If they are made of wheat flour, you are getting high doses of Amylopectin which can lead to higher insulin resistance, Type II diabetes, amputation of limbs due to loss of circulation, gangrene, and death.

    Eat kale instead.

Thanks for the concern, but it all sounds like a bunch of blabbity, blah, blah when stacks of cakes are being splattered on the boards.

If you look back at everybody who was alive 150 years ago, they are all DEAD today.

    It's a conspiracy!

Wheat, and therefore Monsanto, is behind it all.

Look around. People are DYING every day!

    Buckwheats!

The Rumford Baking Powder site has a great recipe for whole wheat waffles that would make great pancakes, too. Unlike many whole wheat recipes, it does not use any white flour.

    Corncakes are good, too.

I am not fond of crepes or very thin pancakes, but find them hard to turn down.

Grew up on Bisquick pancakes. Sorry, but I am not dead yet. If eating too many panckaes were to be listed as the cause of my death I would certainly hope that the obit would say that I died a happy man.

I prefer French toast or waffles over pancakes, but there's this pretty good breakfast/brunch place in Tokyo and honolulu that serves pancakes with a bunch of fresh fruits on top.

The wait is usually a few hours in Tokyo, not sure about Honolulu.

    seriously these are addictive....the goddess(Nigella Lawson )

    Ricotta Hot cakes
These are breakfast pancakes summer-style, ridiculously light, and lemony somehow even without the addition of lemon. If you imagine the flavour of cheesecake combined with a texture that's best, if wordily, described as a kind of souffled griddle cake, you're somewhere near getting the measure of these. My tip, however, if to cut to the chase and make them yourself. Serve, outside if weather and property ownership permits, with some chopped ripe strawberries, partially crushed with a fork, tumbling on top. There is a vocal syrup-dousing contingent in my house, but in my view it mars their fabulous delicacy and, besides, the accompanying fruit allows you to delude yourself that these are healthy.- Nigella Lawson

One of my great Aunts loved pancakes, and she lost one leg from diabetes complications. They were ready to amputate the other leg when she died.

OK... first of all, with all the work done to make that raspberry look succulent and in some ways downright erotic... those are some of the nastiest fingers I've seen... cut on the left... bleeding crusty cuticle on the right AND a flakey dirty fingernail... just... ew.

But as far as pancakes, they are a rare but indulgent guilty pleasure. I like a stack of them layered with a over-easy egg between them. No butter, no syrup.

    Yummm...
