Duck

    Recently was in Costco and discovered they sold "natural" dusk (Don't know whether or not it was organic - probably not, but was tasty.)

    Got 2 meals for two out of it, plus a duck salad for a third. Then got to make duck soup out of the carcass. And got some duck fat to save for sauteeing.

    When my kids were still living with me, I'd make a duck on the rotisserie. Puncture the duck in many places so the fat drips out, cook slowly, and glaze it with honey and orange juice near the end of the cooking.

    I always order duck when I see it on a menu but I've never cooked it. I hear it kinda smells while cooking?

    Don't cook it with the feathers still on. Otherwsie it smells like chicken when roasting.
