Sweet potato skin?

    I always eat the whole veggie or fruit besides bananas or somethin else ridiculous like coconut..but sweet potato,mango,kiwi..I just eat the whole thing. Anyone else do this?

    Instead of being manipulated by tales of starving children in China, we were taught that concentration camp survivors survived by eating thrown out potato skins because they're the most nutritious part.

    We love sweet potatoes and have them all the time, but up until tonight, I've been giving the skins to the dog. Reading this thread has caused me to realize we can eat them ourselves. (Looks like the dog might not be getting so many skins from here on).

    They're amazing, and much of their goodness is in that skin.

    well, sometimes i eat potatos with skin on, but kiwi? not really~~~ make the taste weird~~~

    I started eating sweet potatoes with the skins on a few months back, and they're really quite nice. Kiwi on the other hand...

    I never peel the skins. I actually cut them into cubes, toss them into a mixture of curry, sea salt, red pepper, oregano and a teaspoon of corn starch. I then put them in a roasting pan, drizzle with a little olive oil and bake them for 30 minutes or until a little crispy. Delicious.

    I do that, too, and eating the skin is a great way to avail oneself of the potassium. Although the first time I bit into one, I hadn't realized how well and how long sweet potatoes hold their heat. Ow!
