I've got an easier method that I bet is better-- got it from Cook's magazine and it really works though it sounds bizarre:
Season pork chops with olive oil, salt, pepper, and a very, very light dusting of sugar. Place in a room temperature frying pan, place over the heat, cook at medium-high until the first side looks right, flip and finish until the center reads 145 on a thermometer. (Investment in an instant thermometer was the best thing I've bought in years for the kitchen.) Sounds crazy but it is amazing.
