NYT: to make a great hamburger is a question that has bedeviled the nation for generations, for as long as Americans have had griddles and broilers, for as long as summertime shorts-wearing cooks have gone into the yard to grill.

But the answer is simple, according to many of those who make and sell the nation’s best hamburgers: Cook on heavy, cast-iron pans and griddles.

The flavor's better because you're eating part of every meal you've ever cooked that cookware. You can't actually wash cast iron cookware or it'll rust. It must be properly maintained by "seasoning." Cast iron cookware's the main reason open concept kitchens are a BAD idea.

Sorry - I meant an open kitchen. (I think I got "open concept" from all those HGTV shows like "Property Brothers" where everybody states they want "open concept", and I confused the phrase with open kitchens.) Meaning open to the entertaining area so you can be with your guests while you cook, and if you're a parent, keep an eye on your kids. They've been in vogue for years even though every mistake and dirty pan is on full display for all to see.

A burger pan fried with a little butter trumps the grill
