Can anyone recommend some gym exercises for non-swim days that would help in improving strength and endurance in arm muscles used in swimming?

EDIT: (and chest and back - not sure to what extent these muscles are used in swimming)

Prone paddle board workouts. Similar motion but less stress on the shoulders... also great fun!

Some of the best exercises my teammates and I were taught (for water polo and swimming) that I still do include:

For upper body - lateral dumbbell side raises, 3 sets of 12; military press, 3 sets of 12; barbell shrugs, 4 sets of 10; reverse fly, 3 sets of 8.

For lower body - bike riding and stair running, plus squats, leg press, lunge and leg extensions, using medium weights.

Are you focusing on sprinting or long distance swimming?

So you should be looking at high rep, low volume exercises.
On top of what Jockbod48 suggested, try some bent over barbell rows, they will work your back muscles as well as your biceps.
