Sometimes some of these personal decisions have to be subordinated to the preferences of your boss. It's life. I don't care for facial hair and if I saw a chef with a full beard, I'd be unlikely to want to eat in that restaurant. Unfair, I know, but there are lots of restaurants and I'll also choose which to give my cash to based on lighting and decor and location. Food quality, obviously. So my point is restaurants are a tough business. Managers and owners will do whatever they can to maximize the likelihood of success. If you insist on the beard, you will limit which restaurants will be interested in hiring you. Your choice.
