I've known several chefs and seen some on TV who have beards but if you notice, the beards are very well groomed and trimmed. If you look like those guys from Duck Dynasty, then shaving would make sense.

I don't see any potential health hazards from beards but if the restaurant you work for wants you to shave due to policy, then your choices are to comply or find another job.

Sometimes some of these personal decisions have to be subordinated to the preferences of your boss. It's life. I don't care for facial hair and if I saw a chef with a full beard, I'd be unlikely to want to eat in that restaurant. Unfair, I know, but there are lots of restaurants and I'll also choose which to give my cash to based on lighting and decor and location. Food quality, obviously. So my point is restaurants are a tough business. Managers and owners will do whatever they can to maximize the likelihood of success. If you insist on the beard, you will limit which restaurants will be interested in hiring you. Your choice. It's one of these things that real life will do to you that kids in school don't have to deal with. Welcome to the real world.
