How do you figure out you 1RM and how low percentage wise should you go?

It's more theoretical than actual. On any given day it can vary so you guestimate. You mainly use it in setting warmup sets, determining set reps, or pump sets.

It is dangerous to realize your one-rep maximum. I typically calculate it mathematically from 65% or 70% of an eight-rep lift.

this can help get a pretty accurate 1rm if you know how much weight you can do for a certain amount of reps. I would say try keeping the reps low like 3-5 to find out your 1rm. That site also tells you what weights to use for a 5-3-1 program to progress your 1rm.
