    They say all wheat is bad, including gluten free. Wheat is one grain that has been genetically modified so many times.......

    The argument that today's wheat is significantly genetically different from the wheat of thousands of years ago (wheat grains were found in the tombs of the pharaohs so it's been eaten by man for a very long time) is exactly the kind of stupid "logic" that the Weston A. Price foundation uses.

    Notice how they've shifted the argument; the original claim is that gluten is bad for us. As the video points out, people are assuming that since gluten makes you sick if you have celiac disease (which you would have been born with since it's a genetic disease) we should all avoid gluten. But the "genetically different" wheat argument has made this sudden leap that it's wheat that's bad for us. And the paleo diet is all about not eating grains and legumes (beans), so this stupid argument dovetails nicely with their anti grain stance.

    Gluten isn't just in wheat; it's also in barley, oats, rye, and other grains. Gluten is a specific chemical / molecule. People who have celiac disease get sick when they consume gluten, regardless of where it comes from. Gluten free wheat, if such a thing existed, would not make them sick.

    The only reason gluten is on other grains like oats or barley is the result of cross contamination where actual wheat products can come into contact with oats, etc. There is such a thing as gluten free oats which are processed in plants void of any wheat products.

    I would love to see someone do an experiment with people where the test subjects are self diagnosed gluten intolerant and have been tested to not have celiac disease.

    In the experiment give them bread that's made with a gluten free grain, e.g., rice flour or any of the others from the list on the above Mayo Clinic link, but which has had pure gluten added to it so that the bread will rise from the baking powder. Wheat flour has about 12% to 14% gluten. The bread will taste like the usual gluten free breads they're used to. Have them eat the bread every day for a week or two and see if they have any reaction.

    A lot of time when people think that they're having a reaction it's all in their mind, aka the placebo effect, or sort of the inverse of it in this case.

    Pure gluten is available at health food stores or online, and it's also called vital wheat gluten.

    My previous job was working with "gluten free" foods, and the fact is GLUTEN FREE is NOT A FAD!!!

    It's for people who actually are allergic to wheat and barley, my former boss kept talking my ear off about it, she has something called celiac, which means she can't have anything with wheat in it.

    Gluten is in just about everything, the allergen effects primarily women, and the "gluten free" diet is not recommend for anyone who does not have the allergy. It may sound like a health alternative, but like I said, NOT RECOMMEND FOR THOSE WHO DO NOT HAVE THE ALLERGY!!! Don't believe me, look it up.

    Cooking and baking gluten free foods is hell : constant hand washing, cleaning equipment after every use, adding flavor to flavorless foods, I swear it's like trying to please a germaphobe.
