Husband Making His Sicilian Eggplant Caponata

    He just gets so happy doing this, he's part Sicilian, as well as mainland Italian. Part Napoli e Abruzzi on the Italian side (Abruzzo is a mountainous region along the Adriatic). His cooking reflects those combined heritages.

    He made 4 large trays, each big enough for an entire lasagna for 8! 3 are in the oven now, the 4th has to wait, no room. And then they sit in the refrigerator for a couple of days, before he vacuum cans it all in glass jars boiling in water, producing literally dozens of them.

    I make the jar labels on the computer, with a "cucina" (kitchen) image theme I created. We keep some, but most are given away as gifts to friends. The caponata is used as a spread on crackers and bread, for the most part, or as a side with some dishes.

    His family recipe (and caponata can be very varied in ingredients throughout Italy, sometimes just mainly consisting of eggplant) includes the eggplant, celery, mushrooms, green peppers, carrots, tomatoes, capers, and various herbs & spices (many of those grown ourselves). It used to take him all day slicing these things into tiny pieces using a small Cuisinart food processor.

    So a couple of years ago I bought him a gigantic 16-cup Cuisinart, virtually a commercial model, and he gets the job done in 30 minutes. The damn thing devours the food, almost frightening to watch it, slicing faster than he can feed the stuff in. He totally fills the large bowl about 5 times.

    So now It's great to watch him enjoying himself, making more of his caponata than he ever did before. Cooking is as much a hobby to him as the hobbies of any retired guys are.

    And a disclaimer, before southbeach1500 craps all over this thread and tries to derail it, as he often does with me. I have always said here my partner's not my legal husband, yet. But in spirit he's my husband, in my heart. And all our friends call us husbands. So I don't need an Internet troll like SB contradicting or challenging me here.

    In my few relationships, i never found anyone who was good at or really enjoyed cooking. Wonder why that keeps happening?

    Yum! Although I have no Italian heritage, I love cooking and eating Italian and Italian-American food. Here in New Orleans we have a cuisine called Italian-Creole which is inspired by the melding of traditional Creole cuisine with Sicilian cuisine. New Orleans has a large Sicilian population which has greatly influenced the local cuisine and culture.

    You posted a topic on food that perhaps should have been logged onto the food forums. So it left me wondering. Some guys get a hard on in the kitchen and food seems to do it. In a good way too. So considering all things gay??? This left me wondering. I am never sarcastic, funny or insulting. I am curious??? hahah

    Yeah, I might have put this in Food, but frankly All Things Gay gets more exposure. And I wasn't discussing the caponata recipe in detail, which is outside my area of expertise, but rather it was more about the pleasure he gets from it. And the pleasure I get from watching him being so happy, and trying to help him through indirect means that are within my realm of ability.

    And BTW, I don't even especially like caponata myself. He knows that, and I'll sample a little to be polite. Those who enjoy it say it's great. I'm more focused on him being content & happy making it, and him knowing people like it and ask for more. Again, a very Italian trait of his.

    What's a FEEDER? And of course he's not naked in his kitchen, nor am I. I just peek in every now and then, seeing him bustling around, as happy as can be. Once he starts I stay out of there, the kitchen is his domain. It's his pleasure working at what he loves that warms my heart, there's nothing sexually physical involved. Do you think you could keep this discussion above the immature grade school level?

    Now that he's finished in there for the night, the first batches in the oven, I've cleaned up the kitchen, the dishwasher loaded & running. That's my contribution. A fair division of labor we always follow, and suitable to my limited kitchen talents, if you can call them that.

    The remaining batch gets baked tomorrow, then it all goes into the refrigerator for 2 days, to like settle or cure or something, beyond my culinary comprehension. On Tuesday or Wednesday he'll start the canning.
