Blueberry Pancakes!

    The husband just made them for us. A morning ritual on many Sundays. Sometimes I make him poached eggs on Sunday, that he adores, but I'm incompetent in the kitchen. So usually he'll make pancakes. For an Italian he does a pretty good job, I'll tell yah. icon_biggrin.gif

    My weekend breakfast is usually 3 sliced bananas on a stack of pancakes (nuke in the microwave for 5 min) drizzled with maple syrup and covered in cinnamon. With a big mug of fresh coffee, it's heaven.

    Sound lovely. But how do you make the pancakes? I didn't know Brit guys made them.

    I certainly can't, it's an art. One that my husband had mastered. I may be able to make eggs 20 different ways from Sunday for him, but pancakes I wouldn't even try. And of course he makes them from scratch, no boxed mix (unless he's being lazy).

    Try Gluten free. Healthy alternative to regular flour based pancakes and they won't spike your blood sugar as much!
