Just west to my local Costco to get my cheap organic eggs, and left with a small salmon as well.

Look at the package and see where it is from. Apparently "wild salmon" is now shipped to China for "processing" . Which means it is switched for farmed artificially colored salmon.

If it is pure, wild salmon than why does it need this so called "processing"?

It's always worthwhile to see where the food is coming from. I never eat anything, particularly seafood, if I know it passed through a processer in China. Canada has next to useless food "country of origin" laws so it's hard to tell.

still, that's still a good price. I buy whole wild sockeye salmon here (Vancouver) when they go on sale for $C 0.99/100g. I'm pretty certain they are caught lc ally.

I filet and vacuum pack them myself for freezing. They can last a long time...
(Until they get poached in white wine! Yum).

Always grab a slab of smoked salmon, when visiting Costco; Down Under.
