a new orleans tradition is red (kidney) beans and rice, usually served on mondays.

i put a pound package of dry beans in my crock pot along with chopped up: italian sausage, bell peppers, garlic, onions, shallots, pickled/smoke pork meat, parsley, bacon, cayane and black peppers, and whatever left over shredded meat i happen to have in the fridge, add enough water to get to within an inch of the rim of the crockpot, and cook on high for 18 to 24 hours.

i view red beans as a type of mulligan stew...whatever i have in the fridge/spice cabinet goes into it.

a half cup of sugar/honey/artificial sweetener and a stick of butter can sometimes be added, but this does compromise the otherwise low calorie aspect of this recipe. icon_rolleyes.gif

the aroma of this brew marinating and cooking away had been known to wake me up during the night. icon_lol.gif

when the beans are tender, with thick, savory self made gravy present, i make 2 cups of brown rice and a pan of corn bread.

    yummmmmmmmmmmm!!! icon_wink.gif

Hmmm, I could just put all of you in a slow cooker and eat you all up. Wait, that may not have come out right. Handsome slow cookers you are. And that's how I like things, nice and slow.

    Damn wine.

and old tradition here, RB&R on mondays, fish on fridays.

according to folk lore, RB&R was served on mondays because the housewife did the washing and house cleaning on mondays. the beans could simmer on the stove all day why she toiled at the domestic duties.
