Bloody quick Chicken and Mango Salad. My favourite recipe ever! :D

    What you need:
    About 400g of chinese cabbage/wombok
    2 cups cooked chicken breast (shredded, chunks, whatever)
    2 mangoes (peeled, sliced and seeded) Canned mangoes work well too if you dont want to extra effort
    Handful of chopped unsalted peanuts

    DRESSING:
    2 tablespoons lime juice
    1 heaped tablespoon brown sugar
    1 tablespoon sesame oil
    Chopped chilli (only tiny little bit of pre-chopped chilli in a jar if your not a fan of hot food, if you LOVE spicy food like me go the whole damn chilli icon_razz.gif)

    What to do:
    1. In a large bowl combine chicken, wombok and mango.
    2. Dressing: In a jug whisk together all the ingredients with a fork. Season to taste icon_smile.gif
    3. Throw peanuts and half the dressing into the bowl. Toss.
    4. Serve up while adding remaining dressing to each invdividual plate.
    5. Top with sesame seeds if desired.

    Whala!

    I done the math and it contains about 900kJ, 9g fat and 1.5g sat fat.
    So its pretty good altogether icon_smile.gif

    I had the most amazing green mango salads in Cambodia, but they made them with shrimp. Mango is in season these days, too. I'll definitely try it out!
