Post some of your favorite healthy and delicious recipes. Tofu, chicken, fish, lean beef, veggies, fruits--whatever recipes you like to cook that keep you healthy, post 'em. Here's one to start it off.

Easy and delicious salmon recipe for one

2/3 cup low sodium soy sauce
2/3 cup real maple syrup (you can use fake, but it's not as good)
Salmon steak, skin removed
Brown rice

Mix the soy sauce and maple syrup together. Put half in a small glass tray or a bowl big enough to fit your salmon steak. Put the rest aside for later.

Marinate the salmon in the mixture for 1-2 hours (more if you want more flavor), making sure both sides are marinated.

In the meantime cook your brown rice (I'll assume you know how).

Preheat your oven to broiling temperature.

Steam or boil your asparagus. I prefer steamed.

Place the marinated salmon on a broiling tray and cook each side for 6-8 minutes (it doesn't take long to cook).

Put your salmon on a bed of rice, top it with the asparagus, and then pour some of the unused syrup/soy mixture over the whole thing.

You can play with the syrup soy mixture to get the desired sweetness to salty taste, but I find that half and half works for me.
