I just started going to the gym again. I go at night from 9:00-10:00pm. I plan on going at least 5 days a week.

    I am 27, 6'1", and weight 175.

My goal is to lose unwanted fat around the stomach and more importantly, gain muscle mass.

About how long will this take? Will I see very noticeable differences by the Spring and Summer this year?

Dedicate yourself for 3 months. You should see results by then....actually sooner. But by the end of 3 months, you will see solid results.

And remember the longer you stare in the mirror, the faster they grow.

If you plan for success, as any Real Jock knows, you'll need to be patient. It's a virtue of almost all successful folks. Bearing that in mind, and not having a picture, you can see results (soreness and firmess) the very next day. It depends on how one is to describe results. More importantly, it depends upon your genes, prior training, nutrition, training method, and recovery / rest. If you don't eat, don't train properly, changes will happen in a different way. If you eat well, are a studied athlete, know how to train, changes will happen more quickly.

Bottom line, for success you have to have most of the following:
    Stimulation / Smart training.

If you train stupid, or don't eat, it could seem like forever.

To answer your question: it's anybody's guess given the lack of information you've provided, and given the nature of the question. It will take as long as it takes.

If you stick to your regimen
and you are on a healthy diet as well you'll
see results in a few weeks

What I would suggest is take a picture
now... because you won't see results as quickly as others who don't see you everyday will
