    What are sausage ROLLS? Just sausages, or something else? Please explain.

    There are many different versions of recipes for sausage rolls. Some people may buy Italian sausages, remove them from skin, to then use as a filling. I've always made my from scratch. Using basic recipe using sausage mince, pork mince whit bread, mixed herbs, grated carrot, tomato paste. Soak bread in warm water, no crust, then mix all ingredients together, lay along puff pastry, roll into a sausage shape, cut to size then bake.until golden brown.
    Check out Google for recipes.
    As I said, there are many diffrent variations.

    I usually make the crust out of a pie crust. and then brush egg whites on top so that they come out golden brown. You just roll out the pastry, cut them into squares, roughly around 4"x4". Put the glob of sausage from one corner to another and then roll the other ends together. Some people use actual little sausages. I don't like to do that. It does not come out good that way. It is better to use a loose fill for some reason.

    There was Vegan when you were a kid? I only first heard the term a little over 20 years ago.

    As for sausage rolls, if it’s just the meat inside, I wonder why bother with the casing? Just go right to the ingredients. Which for my guy is usually a blend of beef & pork, plus seasoning. Meatballs can be made the same way.

    We can actually make our own sausages. Have a powered meat grinder and cone attachments on which to place the casing. Our main problem is finding casings locally in smaller quantities.

    Almost impossible here, unless you’re a food company and buy them in bulk by the hundreds. We don’t have the refrigerator space for boxes of them, nor would we use them up quickly enough.

    Those images do look yummy. You said made with pie crust, but I wonder if phyllo would also work? Very light for pastries, though not sure how it would handle cooking meat. Perhaps pre-cook the sausage meat a bit before wrapping?

    lol...no, I was not a vegetarian as a child. icon_smile.gif Vegans have been around a lot longer than 20 years though.

    Phyllo dough would probably work well. I have not tried that though.
